The oil "del raig" is the result of the olive elaborate and finished packing direct, unfiltered. This allows you to get all the flavor of the oil and not lose the quality of the oil. It is very fruity. The volatile material gives it aroma, flavor and texture.

As was done previously and to prevent oil centrifuge once made extraction, the oil goes to slop tanks. In these deposits is where the difference pesos prefer organic particles and water. This yields a turbid oil which is known as oil "del raig".
